HUB’s Favourite Baked Goods Recipe Collection

The HUB team have created a collection of their best and favourite baked good recipes to share with you all (with some cheeky vegan recipes in there as well).

1. Vanilla (or Chocolate) Cake Recipe

Starting off with a classic - a simple yet delicious cake recipe.

Ingredients

1 cup self-raising flour

1 cup sugar

2 tbsp custard powder (or cocoa powder for chocolate cake)

2 eggs

1/2 cup milk

1/2 tsp vanilla

125g butter

Directions

  1. Preheat oven to 160 / 180 degrees celcius

  2. Cream butter and sugar together

  3. Add eggs and vanilla, combine

  4. Add flour and custard powder, combine

  5. Add milk, combine

  6. Bake in oven for 30 - 45 minutes, or until you can poke it with a toothpick and pull it out dry

2. English Muffins

This one’s a little bit different, for those who like to get a bit adventurous with their baking (but still quite easy).

Ingredients

300g bread flour

5g salt

5g white sugar

5g instant dried yeast

150ml milk (tepid, 35 degrees celcius)

1 egg (room temperature)

15g unsalted butter (room temperature)

Cornstarch

Directions

  1. In a bowl, add flour, salt, sugar, yeast, milk and egg. Combine until a dough forms.

  2. Add butter by pinching and squeezing it (in the bowl).

  3. Once the butter is incorporated, knead dough (on a surface) until smooth.

  4. Form a ball with the dough and place it back in the bowl. Cover with a tea towel, and let rest for 1 hour.

  5. Place dough onto a surface and roll into a log. Divide into 6 equal pieces and form into balls. Cover them with the tea towel and let sit for 15 minutes.

  6. Dust cornstarch over the top and bottom of each ball. Slightlt squash them. Cover and let rest for 45 minutes.

  7. Cook each muffin in a pan over low heat, giving each side between 4 and 5 minutes. Remove and then cool.

3. Vegan Chai Cookies

You can never go wrong with anything that involves chai!

Ingredients

140g self raising flour

110g vegan butter (Nutulex)

125g brown sugar

1tsp vegan egg replacement powder

1tsp vegan chai powder

1tsp cinnamon

2g baking powder

Directions

  1. Add to a bowl melted butter, sugar, chai powder and cinnamon

  2. Beat together ingredients until they reach a cream consistency

  3. Add flour, egg replacement, baking powder and vanilla to the creamed wet ingredients

  4. Once well combined, scoop 1 teaspoon of mixture into balls

  5. Place balls on baking tray lined with baking paper. Cook for 15 minutes at 180 degrees celcius

4. Vegan Banana Bread

Its important to always have a staple banana bread recipe and this is it (and its a great way to use up those too ripe to eat bananas)!

Wet Ingredients

4 large, very ripe bananas

1/3 cup vegetable oil

3/4 cup packed brown sugar

1 teaspoon vanilla extract

Dry Ingredients

1 cup plain flour

2/3 cup wholemeal flour

2 teaspoons baking powder

2 teaspoons ground flaxseeds

1/4 teaspoon baking soda

2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 180 degrees celcius

  2. In a bowl, mash the bananas then add the rest of the wet ingredients. Mix well.

  3. Add the dry ingredients to the wet ones and mix well to combine.

  4. Pour into a lined loaf tin.

  5. Bake in oven for 40 - 45 minutes until a toothpick comes out clean.

  6. Let cool for at least 30mins before taking out tin.
